
Pai Mu Tan, also known as white peony, is a loose leaf white tea from
the Fujian Province of China. Â Pai Mu Tan leaves are plucked from a
special varietal tea bush called chaicha. Â Only the youngest two leaves
and the bud are selected from each branch to make this premium tea.
To be selected, leaves must be very light green almost gray/white in
color and covered in velvety fuzz. Â White tea is a subclass of green tea.
Due to its recent acclaim, however, it has been given a class of its
own. Â The major distinction is that the buds and select leaves of white
tea are merely air dried, rather than steamed or pan fired like other
teas. Â This minimal amount of processing can make white tea have up
to three times more beneficial antioxidants than green or black tea.
