Pai Mu Tan, also known as white peony, is a loose leaf white tea from
the Fujian Province of China.  Pai Mu Tan leaves are plucked from a
special varietal tea bush called chaicha.  Only the youngest two leaves

To be selected, leaves must be very light green almost gray/white in
color and covered in velvety fuzz.  White tea is a subclass of green tea.
